Sometimes there is settlement at the bottom of the bottle. Is this normal?
When the oil is extracted from the oil bearing seeds, fine pulp of the seed gets along with the oil. After the extraction, the oil is filtered either through gravity filtration or the oil is passed through filtrates. We use gravity filtration and at times you may observe some little settlement at the bottom which is nothing but the natural fine pulp but the quality of the oil is not compromised.
What are different Oil Categories
Extra virgin oil: Highest grade of oil which is extracted from the quality seed through cold pressing mechanism.
Virgin oil: Second best grade oil extracted using second grade seed through cold pressing mechanism.
Refined oil: Oil extracted using chemical, thermal and mechanical process, typically using low grade seeds.
Light Oil: Light oil has as many calories and as much fat as the other types. “Light” refers to the flavor sensation. Extracted through refinery process.
Pomace Olive oil: Lowest grade oil. Oil extracted from the discarded olive pit and from already extracted pulp, typically through refining process.

What is the FDA stand on cholesterol?
Excerpt from health.gov:
Page 91 of the 572-page Scientific Report of the 2015 Dietary Guidelines Advisory Committee: “Previously, the Dietary Guidelines for Americans recommended that cholesterol intake be limited to no more than 300 mg/day. The 2015 Dietary Guidelines Advisory Committee will not bring forward this recommendation because available evidence shows no appreciable relationship between consumption of dietary cholesterol and serum (blood) cholesterol, consistent with the AHA/ACC (American Heart Association / American College of Cardiology) report.”
